South African Bobotie Recipe | Traditional Cape Malay Spiced Meat Casserole

Cooking Method
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
- Soak the bread in the milk for 5 minutes, then gently squeeze out the excess milk. Reserve the milk for the custard.
- Heat the vegetable oil in a large skillet over medium heat.
- Sauté the onion until soft, then add the garlic and cook for 1 minute.
- Add the ground beef or lamb and cook until browned, breaking it apart with a spoon.
- Stir in the curry powder, turmeric, cumin, coriander, salt, and black pepper.
- Add the chutney, raisins, Worcestershire sauce, lemon juice, sugar, and soaked bread. Mix well and cook for 5 minutes.
- Transfer the meat mixture to the prepared baking dish and smooth the top.
- Whisk together the eggs, reserved milk, and a pinch of salt.
- Pour the custard evenly over the meat.
- Place the bay leaves on top.
- Bake for 35–40 minutes, or until the custard is set and lightly golden.
- Allow the Bobotie to rest for 5 minutes before serving.
