Pirão is a staple dish in Angola, made from cassava flour and water. Known for its smooth, soft, and creamy texture, Pirão is commonly served as an accompaniment to fish stews, meat dishes, and vegetable sauces. 

A fundamental part of Angolan cuisine, Pirão is similar to other cassava-based staples found throughout Africa. Its mild flavor makes it the perfect partner for richly seasoned dishes, helping to absorb flavorful sauces and broths. Easy to prepare and highly satisfying, Pirão remains a daily favorite in many Angolan households. 

This traditional recipe uses only a few simple ingredients while delivering an authentic taste of Angola's culinary heritage. 

Cooking Method


  1.  Bring the water to a boil in a large saucepan. 
  2.  Add the salt if using. 
  3.  Reduce the heat to medium. 
  4.  Gradually add the cassava flour while stirring continuously. 
  5.  Continue stirring to prevent lumps from forming. 
  6.  Cook the mixture for 10–15 minutes. 
  7.  Stir vigorously until the Pirão becomes smooth and thick. 
  8.  If the mixture becomes too thick, add a small amount of hot water. 
  9.  Continue cooking until the desired consistency is reached. 
  10.  Remove from heat and shape into a mound or serve directly from the pot. 
  11.  Serve hot alongside fish, meat stews, or vegetable dishes.
