Cooking Method
Cook the chow mein noodles according to the package directions. Drain, rinse briefly with cold water, and set aside.
In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, brown sugar, cornstarch, and water until smooth.
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
Add the shrimp and cook for 1–2 minutes per side until pink and just cooked through. Remove from the pan and set aside.
Add the remaining vegetable oil to the wok. Stir-fry the onion, garlic, and ginger for about 1 minute until fragrant.
Add the cabbage, carrot, bell pepper, and bean sprouts. Stir-fry for 3–4 minutes until the vegetables are crisp-tender.
Add the cooked noodles and pour the prepared sauce over them. Toss everything together until the noodles are evenly coated.
Return the cooked shrimp to the wok and toss gently to combine. Cook for another 1–2 minutes until everything is heated through.
Stir in the sliced green onions and remove from the heat.
