Mix sourdough starter, warm water, and honey in a bowl.
Add bread flour, whole wheat flour, and salt. Mix into a sticky dough.
Knead gently and cover the dough. Let it ferment for 6–8 hours until risen.
Shape the dough into a round loaf and rest for 1–2 hours.
Score the top of the dough and place it in a preheated oven.
Bake at 230°C (450°F) for 35–45 minutes until golden and crusty.
Cool completely before slicing and serving.
