Cooking Method


  1.  Melt the butter with the olive oil in a large pot over medium heat. 
  2.  Add the onion and cook for 4–5 minutes until softened. 
  3.  Stir in the garlic and grated carrot, cooking for another minute. 
  4.  Sprinkle the flour over the vegetables and stir continuously for 1–2 minutes. 
  5.  Gradually whisk in the broth until smooth. 
  6.  Add the broccoli florets and bring the soup to a gentle boil. 
  7.  Reduce the heat and simmer for 15 minutes, or until the broccoli is tender. 
  8.  Stir in the milk and heavy cream, then heat gently without boiling. 
  9.  Gradually add the shredded cheddar cheese, stirring until fully melted and smooth. 
  10.  Season with salt, black pepper, and paprika if desired. 
  11.  Blend part of the soup with an immersion blender for a creamier texture, leaving some broccoli pieces intact if preferred. 
  12.  Serve hot with crusty bread or crackers.
