South African Braaied Snoek is a classic coastal dish featuring fresh snoek fish grilled over hot coals and basted with a flavorful apricot glaze. A favorite at braais across the Western Cape, this traditional recipe is known for its smoky aroma, tender flaky fish, and perfect balance of sweet, savory, and tangy flavors.

Fresh snoek is lightly seasoned and grilled over medium-hot coals until the skin is crisp and the flesh is moist and flaky. During grilling, the fish is repeatedly brushed with a glaze made from apricot jam, butter, lemon juice, garlic, and Worcestershire sauce, creating a glossy caramelized finish that complements the fish's rich flavor.

Traditionally served with warm bread, potato salad, pap, grilled vegetables, or a fresh green salad, Braaied Snoek is a highlight of family gatherings, beach cookouts, and weekend braais. While snoek is the authentic choice, other firm fish such as mackerel or bonito can be substituted where snoek is unavailable.

Easy to prepare and full of authentic South African flavor, Braaied Snoek is a delicious seafood dish that celebrates the country's rich braai tradition. 

Cooking Method


  1. Preheat a charcoal braai or grill to medium heat.
  2. Pat the snoek dry with paper towels and brush both sides with olive oil. Season evenly with salt and black pepper.
  3. In a small saucepan, combine the melted butter, apricot jam, minced garlic, lemon juice, and Worcestershire sauce. Heat gently, stirring until smooth.
  4. Place the snoek skin-side down on the grill and cook for about 8–10 minutes.
  5. Brush the fish generously with the apricot glaze while grilling.
  6. Carefully turn the fish and cook for another 6–8 minutes, brushing with more glaze several times until the fish flakes easily with a fork and the glaze is lightly caramelized.
  7. Remove the fish from the grill and allow it to rest for 3–5 minutes.
  8. Garnish with chopped fresh parsley and serve with lemon wedges.
  9. Pair with potato salad, pap, grilled vegetables, fresh bread, or a crisp green salad.
  10. Serve immediately while hot and enjoy.
