Kefir (Caucasus Mountains)
Kefir is a traditional fermented milk drink that originated in the Caucasus Mountains. Made using kefir grains and milk, this creamy, tangy beverage is rich in probiotics, vitamins, and beneficial bacteria. Kefir has been enjoyed for centuries for its digestive and immune-supporting properties, making it one of the world's most popular fermented health drinks.
Cooking Method
Step 1: Prepare the Milk
- Pour the milk into a clean glass jar.
Step 2: Add Kefir Grains
- Add the kefir grains to the milk and stir gently with a wooden or plastic spoon.
Step 3: Ferment
- Cover the jar with a breathable cloth and secure it with a rubber band.
- Leave at room temperature (20–25°C / 68–77°F) for 24–48 hours.
Step 4: Strain
- Once the milk has thickened and developed a tangy flavor, strain out the kefir grains using a plastic sieve.
- Reserve the grains for future batches.
Step 5: Flavor the Kefir
- Stir in honey, vanilla extract, raisins, and lemon zest if desired.
Step 6: Chill
- Transfer the kefir to a bottle or jar and refrigerate for at least 2 hours.
Step 7: Serve
- Pour into glasses, garnish with fresh mint leaves, and serve chilled.
