Prepare Dough: Mix all-purpose flour with salt and a little oil. Add water gradually and knead into a stiff dough. Let it rest for 20–30 minutes.
Prepare Filling: Heat oil in a pan, add finely chopped carrots and beans, and sauté for a few minutes. Add green peas and cook until slightly tender.
Add Potatoes & Spices: Add boiled mashed potatoes, salt, and spices. Mix well and cook for 4–5 minutes. Let the mixture cool completely.
Shape Samosas: Divide dough into small balls, roll into oval shapes, cut in half, form cones, and fill with vegetable mixture. Seal edges with water.
Frying: Heat oil on medium flame and deep fry until golden brown and crispy.
Serve: Serve hot with mint chutney or tamarind chutney.
