Cooking Method


  1.  Soak the hominy corn and beans overnight, then drain. 
  2.  Heat olive oil in a large pot over medium heat. 
  3.  Cook the bacon until lightly crisp. 
  4.  Add pork and beef, then brown on all sides. 
  5.  Stir in onion and garlic, cooking until softened. 
  6.  Add tomatoes and tomato paste, then cook for 3–4 minutes. 
  7.  Add hominy corn, beans, bay leaves, paprika, and broth. 
  8.  Bring to a boil, then reduce heat and simmer for about 90 minutes. 
  9.  Add sausage, potatoes, sweet potato, carrots, and cabbage. 
  10.  Continue cooking for 30–40 minutes until all ingredients are tender. 
  11.  Season with salt and black pepper to taste. 
  12.  Garnish with fresh parsley and serve hot.
