Zambian Delele Recipe | Traditional Okra Stew from Zambia

Delele is a popular traditional dish from Zambia made primarily with fresh okra. Known for its smooth, slightly slimy texture and mild earthy flavor, Delele is a staple side dish in many Zambian households and is commonly served with Nshima. 

This nutritious dish is rich in fiber, vitamins, and minerals, making it both healthy and satisfying. Delele can be prepared simply with onions and tomatoes or enhanced with ground peanuts, fish, or meat depending on regional and family preferences. Its unique texture pairs perfectly with the firm consistency of Nshima, creating a classic Zambian meal enjoyed across the country.

Cooking Method


  1.  Wash the okra thoroughly and slice it into small pieces. 
  2.  Heat the vegetable oil in a saucepan over medium heat. 
  3.  Add the chopped onion and sauté until soft. 
  4.  Stir in the chopped tomatoes and cook for 3–5 minutes. 
  5.  Add the sliced okra and mix well. 
  6.  Pour in the water and stir gently. 
  7.  Add salt and black pepper. 
  8.  Simmer for 15–20 minutes, stirring occasionally. 
  9.  Add ground peanuts if desired and mix thoroughly. 
  10.  Continue cooking until the okra is tender and the stew reaches the desired consistency. 
  11.  Remove from heat and allow to rest for a few minutes. 
  12.  Serve hot with Nshima or rice.
