Cooking Method
Wash the beans thoroughly and soak them overnight.
Drain and rinse the beans.
Place the beans in a large pot with water.
Bring to a boil, then reduce the heat and simmer for 1–1½ hours until tender.
In a separate pan, heat the red palm oil over medium heat.
Add the onion and sauté until soft.
Stir in the garlic and cook for 1 minute.
Add the chopped tomatoes and cook until softened.
Mix in the paprika, black pepper, bay leaf, and chili pepper if using.
Add the cooked beans along with a little of their cooking liquid.
