Boza (Turkey & Balkans)
Boza is a traditional fermented grain beverage popular in Turkey and throughout the Balkans. Made from fermented grains such as millet, wheat, or corn, Boza has a thick, creamy texture and a sweet-tangy flavor. This nutritious drink has been enjoyed for centuries and is valued for its probiotic content, vitamins, and energy-boosting properties. It is commonly served chilled and topped with cinnamon and roasted chickpeas.
Cooking Method
Step 1: Cook the Grain
- Wash the millet thoroughly.
- Boil it in 6 cups of water until very soft, about 30–40 minutes.
Step 2: Blend the Mixture
- Allow the cooked millet to cool slightly.
- Blend until smooth and strain through a fine sieve if desired.
Step 3: Add Sugar
- Stir in the sugar while the mixture is still warm.
- Allow it to cool to room temperature.
Step 4: Add Starter Culture
- Mix in the cooked rice and yogurt.
- Stir well to combine.
Step 5: Ferment
- Cover the container with a clean cloth.
- Leave at room temperature for 24–48 hours until slightly tangy.
Step 6: Refrigerate
- Transfer the Boza to bottles or jars.
- Refrigerate for several hours to enhance flavor and texture.
Step 7: Serve
- Pour into glasses.
- Sprinkle with ground cinnamon and garnish with roasted chickpeas before serving.
