Chickpea and Vegetable Stir-Fry

 A quick, healthy, and flavorful vegan dish made with protein-rich chickpeas and fresh, colorful vegetables tossed in a savory stir-fry sauce. Perfect for busy days, this meal is nutritious, easy to prepare, and ideal for lunch or dinner. 

Cooking Method

 

  1. Heat oil in a wok or large pan over medium-high heat. 
  2.  Add garlic and sauté until fragrant. 
  3.  Add mixed vegetables (bell peppers, broccoli, carrots) and stir-fry for 3–5 minutes. 
  4.  Add cooked chickpeas and toss well. 
  5.  Pour in soy sauce and a splash of lemon juice or vinegar. 
  6.  Stir-fry for another 2–3 minutes until everything is well coated. 
  7.  Season with salt, pepper, and optional chili flakes. 
  8.  Garnish with fresh herbs or sesame seeds and serve hot.
