Cooking Method

  1.  Melt the butter with the olive oil in a large soup pot over medium heat. 
  2.  Add the diced chicken and cook until lightly browned and fully cooked. Remove and set aside. 
  3.  In the same pot, sauté the onion, celery, carrot, and garlic for 5–6 minutes until softened. 
  4.  Sprinkle the flour over the vegetables and stir continuously for 1–2 minutes to form a roux. 
  5.  Gradually whisk in the chicken broth until smooth. 
  6.  Stir in the milk, heavy cream, thyme, salt, and black pepper. Bring to a gentle simmer. 
  7.  Return the cooked chicken to the pot and simmer for 10–15 minutes, stirring occasionally, until the soup thickens. 
  8.  Taste and adjust the seasoning if needed. 
  9.  For a smoother texture, blend part of the soup with an immersion blender, leaving some chicken pieces intact if desired. 
  10.  Garnish with fresh parsley and serve hot.
