Cooking Method

 

  1.  Place the chopped pineapple in a large saucepan. 
  2.  Add sugar, lemon juice, and salt if using. 
  3.  Stir well and let sit for 10 minutes. 
  4.  Cook over medium heat, stirring frequently. 
  5.  Bring the mixture to a gentle boil. 
  6.  Continue cooking until the pineapple softens and the mixture thickens. 
  7.  Blend lightly if a smoother texture is desired. 
  8.  Test the consistency on a chilled plate. 
  9.  Remove from heat and allow to cool slightly. 
  10.  Transfer to sterilized jars and seal properly.
