Cooking Method
Heat the palm oil in a large pot over medium heat.
Add the onion and sauté until soft and fragrant.
Stir in the garlic and cook for 1 minute.
Add the chicken pieces and brown lightly on all sides.
Add the chopped tomatoes and cook for 5 minutes.
Stir in the paprika, salt, black pepper, and bay leaf.
Pour in the chicken stock or water.
Bring the mixture to a boil.
Reduce the heat, cover, and simmer for 30 minutes.
Add the sliced okra and chili pepper if using.
Continue cooking for another 20–25 minutes until the chicken is tender and the sauce thickens.
