Cooking Method
Pour the milk and heavy cream into a large saucepan.
Heat over medium heat, stirring occasionally, until the mixture reaches about 85°C (185°F).
Remove the saucepan from the heat.
Stir in the lemon juice or vinegar gradually.
Allow the mixture to sit undisturbed for 10–15 minutes until curds form.
Line a colander with cheesecloth and pour in the curds and whey.
Let the curds drain for 1–2 hours.
Transfer the drained curds to a food processor or blender.
Add the salt and blend until smooth and creamy.
Refrigerate in an airtight container before serving.
