Step 1: Heat Ghee
In a deep pan or pot, heat ghee on medium flame.
Step 2: Roast Sooji
Add semolina and roast in ghee, stirring continuously until it turns light golden and releases a nutty aroma.
Step 3: Add Nuts & Raisins
Add chopped nuts and raisins, and sauté for 1–2 minutes.
Step 4: Add Water Carefully
Slowly pour in water (be careful of spluttering) and mix well to avoid lumps.
Step 5: Add Sugar & Flavor
Add sugar and cardamom powder, stirring continuously.
Step 6: Cook Until Thick
Cook on low heat until the mixture thickens and starts leaving the sides of the pan.
Step 7: Serve Hot
Garnish with extra nuts and serve hot for best taste.
