Cooking Method
Pour the heavy cream into a heatproof saucepan.
Heat gently over low heat to 85°C (185°F), stirring occasionally.
Add the lemon juice and stir continuously for 2–3 minutes.
The cream will begin to thicken slightly.
Remove from the heat and allow it to cool for 20 minutes.
Line a fine-mesh sieve with several layers of cheesecloth.
Pour the mixture into the lined sieve.
Place the sieve over a bowl and refrigerate.
Allow the mascarpone to drain for 12–24 hours until thick and creamy.
Transfer to an airtight container and refrigerate until ready to use.
