Cooking Method


  1.  Heat the olive oil in a saucepan over medium heat. 
  2.  Sauté the onion until soft, then add the garlic and cook for 1 minute. 
  3.  Add the chopped tomatoes and tomato paste. 
  4.  Stir in the brown sugar, vinegar, salt, black pepper, paprika, cinnamon, and cloves. 
  5.  Simmer for 35–40 minutes, stirring occasionally, until the tomatoes break down completely. 
  6.  Remove from heat and allow the mixture to cool slightly. 
  7.  Blend until smooth using a blender or immersion blender. 
  8.  Strain through a fine sieve for an extra-smooth texture, if desired. 
  9.  Return the sauce to the pan and simmer for another 10–15 minutes until it reaches your preferred consistency. 
  10.  Cool completely before transferring to a sterilized bottle or airtight container. 
  11.  Refrigerate and use as needed.
