Tepache (Mexico)
Tepache is a traditional fermented beverage from Mexico made primarily from pineapple peels, water, and unrefined sugar. Dating back to pre-Columbian times, this lightly alcoholic and naturally fizzy drink has a sweet, tangy flavor with tropical notes. Rich in probiotics and beneficial enzymes, Tepache is a refreshing beverage that supports digestion and showcases the vibrant fermentation traditions of Mexican cuisine.
Cooking Method
Step 1: Prepare the Pineapple
- Wash the pineapple thoroughly.
- Remove the peels and core, reserving them for fermentation.
Step 2: Make the Fermentation Mixture
- Place the pineapple peels and core into a large glass jar.
- Add the piloncillo, cinnamon stick, cloves, and ginger.
Step 3: Add Water
- Pour the filtered water into the jar and stir until the sugar begins to dissolve.
Step 4: Ferment
- Cover the jar with a clean cloth and secure it with a rubber band.
- Leave at room temperature for 2–4 days.
Step 5: Stir Daily
- Stir the mixture once a day to promote even fermentation.
Step 6: Strain
- Once the Tepache develops a sweet-tart flavor and slight fizz, strain out the solids.
Step 7: Chill and Serve
- Refrigerate the strained liquid.
- Serve cold over ice for a refreshing drink.
