Cooking Method

 

  1.  Heat olive oil in a pot over medium heat. 
  2.  Add chopped onion and sauté until soft. 
  3.  Add garlic and cook until fragrant. 
  4.  Add carrots and cook for a few minutes. 
  5.  Add tomatoes or tomato puree and mix well. 
  6.  Add cooked white beans and stir. 
  7.  Pour in broth or water. 
  8.  Add thyme, bay leaf, salt, and pepper. 
  9.  Bring to a boil, then reduce heat and simmer for 20–30 minutes. 
  10.  Remove bay leaf, garnish with herbs, and serve hot.
