Cooking Method


  1.  Season lamb shanks with salt and pepper. 
  2.  Heat olive oil in a large pot and brown the lamb shanks. 
  3.  Remove shanks and sauté onion, carrots, and garlic. 
  4.  Stir in tomato paste and herbs. 
  5.  Add broth and bring to a simmer. 
  6.  Return lamb shanks to the pot. 
  7.  Cover and cook slowly until meat is tender.
