Cooking Method


  1.  Heat the butter and olive oil in a large soup pot over medium heat. 
  2.  Add the diced chicken and cook until lightly browned and cooked through. Remove and set aside. 
  3.  In the same pot, cook the onion, carrots, celery, and garlic until softened, about 5–6 minutes. 
  4.  Sprinkle the flour over the vegetables and stir for 1–2 minutes. 
  5.  Gradually whisk in the chicken broth until smooth. 
  6.  Add the milk, heavy cream, thyme, salt, and black pepper. Bring to a gentle simmer. 
  7.  Stir in the potato gnocchi and cook for 3–5 minutes, or until the gnocchi float to the surface. 
  8.  Return the cooked chicken to the pot and stir in the spinach. 
  9.  Simmer for 2–3 minutes until the spinach wilts and everything is heated through. 
  10.  Taste and adjust the seasoning if needed. 
  11.  Garnish with fresh parsley and serve hot.
