Cooking Method
Wash the beans thoroughly and soak them overnight.
Drain the beans and place them in a large pot.
Add water and bring to a boil.
Reduce the heat and simmer for 1–1½ hours until the beans are tender.
In a separate pan, heat the vegetable oil over medium heat.
Sauté the onion until soft and translucent.
Add the garlic and cook for 1 minute.
Stir in the chopped tomatoes and cook until they soften.
Add the cooked bean mixture to the pan.
Season with salt, black pepper, and curry powder if using.
Simmer for 15–20 minutes, allowing the flavors to combine.
Adjust seasoning to taste.
Garnish with fresh parsley or cilantro and serve hot.
