Asian Noodle Salad is a vibrant and flavorful salad made with tender rice noodles, fresh vegetables, and a savory sesame-soy dressing. Crunchy carrots, cucumbers, and bell peppers add texture, while a hint of sesame and soy creates a deliciously tangy, umami-rich flavor. This salad is perfect as a light lunch, side dish, or refreshing snack.
In a large bowl, combine cooked rice noodles, carrots, cucumber, and bell peppers.
In a small bowl, whisk together soy sauce and sesame oil to make the dressing.
Pour the dressing over the noodle and vegetable mixture.
Toss gently to coat all ingredients evenly.
Sprinkle with sesame seeds if desired.
Serve immediately, or chill for 15–20 minutes for a refreshing cold salad.
