Cooking Method


  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft.

  4. Add carrots and celery and sauté for a few minutes.
  5. Add the prepared snails to the pot and stir well.
  6. Pour in the broth and bring the mixture to a gentle boil.
  7. Reduce heat and let the soup simmer for about 20–25 minutes.
  8. Add salt and black pepper to taste.
  9. Stir in chopped parsley for fresh flavor.
