Step 1: Prepare Dough
- Mix flour with a pinch of salt and 1 tbsp oil.
- Add water gradually and knead into a firm dough.
- Cover and let it rest for 20 minutes.
Step 2: Prepare Vegetable Filling
- Heat oil in a pan.
- Add chopped onions and sauté until soft.
- Add ginger paste and cook for a minute.
- Add carrots and peas; cook for 3–4 minutes.
- Add boiled potatoes, garam masala, and salt.
- Mix well and cook until the filling is dry and flavorful.
- Let it cool completely.
Step 3: Shape Singara
- Divide dough into small balls and roll into thin circles.
- Cut into halves and form cone shapes.
- Fill with vegetable mixture and seal edges with water.
Step 4: Fry Singara
- Heat oil on medium-low flame.
- Deep fry until golden brown and crispy.
Step 5: Serve
- Serve hot with mint chutney, tamarind chutney, or ketchup.
