Cooking Method


  1.  Wash and finely chop the tomatoes. 
  2.  Add tomatoes, sugar, lemon juice, ginger, and salt to a large saucepan. 
  3.  Bring the mixture to a gentle boil over medium heat. 
  4.  Reduce the heat and simmer, stirring occasionally. 
  5.  Cook for 35–40 minutes until thick and jam-like. 
  6.  Stir in cinnamon if using. 
  7.  Remove from heat and allow to cool slightly. 
  8.  Transfer to sterilized jars. 
  9.  Let cool completely before storing. 
  10.  Refrigerate and use as needed.
