Cooking Method


  1.  Heat the olive oil in a large soup pot over medium heat. 
  2.  Add the onion and cook for 4–5 minutes until softened. 
  3.  Stir in the garlic, carrots, celery, and mushrooms, then cook for another 5 minutes. 
  4.  Add the zucchini and cook for 2 minutes. 
  5.  Stir in the diced tomatoes, pearl barley, vegetable broth, bay leaf, thyme, salt, and black pepper. 
  6.  Bring the soup to a boil, then reduce the heat to low. 
  7.  Cover and simmer for 40–45 minutes, or until the barley is tender. 
  8.  Remove the bay leaf and adjust the seasoning to taste. 
  9.  Stir in the fresh parsley just before serving. 
  10.  Serve hot with crusty bread or crackers.
