The dish is prepared by cooking eggplant and tomatoes until tender, then blending them with garlic, paprika, cumin, and fresh herbs. The ingredients are simmered together until they form a thick and flavorful mixture. The result is a savory, aromatic salad that can be enjoyed warm or at room temperature. 

Moroccan Zaalouk is often served with fresh Moroccan Khobz bread and is a staple at family meals, gatherings, and festive occasions throughout Morocco. 

Cooking Method


  1.  Place the eggplant in a large skillet or saucepan. 
  2.  Add tomatoes, garlic, olive oil, paprika, cumin, salt, and pepper. 
  3.  Cook over medium heat, stirring occasionally. 
  4.  Cover and simmer for 20–25 minutes until the vegetables are very tender. 
  5.  Mash the mixture with a spoon or potato masher. 
  6.  Continue cooking until most of the liquid has evaporated. 
  7.  Stir in parsley or cilantro. 
  8.  Add lemon juice if desired. 
  9.  Taste and adjust seasoning. 
  10.  Serve warm or at room temperature with bread.
