Road Runner Chicken is a cherished dish in Zimbabwe, made with free-range chicken known locally as "road runner chicken." Unlike commercially raised chicken, free-range chicken has firmer meat and a richer, more robust flavor, making it ideal for slow cooking. 

Zimbabwean Road Runner Chicken is traditionally simmered with onions, tomatoes, garlic, and aromatic spices until the meat becomes tender and infused with rich flavors. This comforting dish is commonly served with Sadza, rice, or steamed vegetables, making it a popular choice for family gatherings, Sunday lunches, and festive occasions. 

Cooking Method


  1.  Wash and pat dry the chicken pieces. 
  2.  Heat the vegetable oil in a large pot over medium heat. 
  3.  Brown the chicken pieces on all sides, then remove and set aside. 
  4.  In the same pot, sauté the onion until soft. 
  5.  Add the garlic and ginger, cooking for about 1 minute until fragrant. 
  6.  Stir in the chopped tomatoes and tomato paste, then cook for 5 minutes. 
  7.  Return the chicken to the pot. 
  8.  Add the paprika, thyme, salt, black pepper, and bay leaf. 
  9.  Pour in the chicken stock and bring to a gentle boil. 
  10.  Reduce the heat, cover, and simmer for 60–90 minutes, or until the free-range chicken is tender. 
  11.  Remove the bay leaf, garnish with fresh parsley, and serve hot.
