Cook lentils in water until soft but not mushy. Drain and set aside.
Heat oil in a pan or wok over medium heat.
Add garlic and sauté for a few seconds until fragrant.
Add chopped vegetables like bell peppers, carrots, and beans; stir-fry on high heat.
Add the cooked lentils to the pan and mix well.
Season with salt, black pepper, and soy sauce or spices as per taste.
Cook for 3–5 minutes, stirring continuously.
Garnish with fresh herbs and serve hot.
