Cooking Method


  1.  Melt the butter with the olive oil in a large soup pot over medium heat. 
  2.  Add the onion and celery, then cook for 5 minutes until softened. 
  3.  Stir in the garlic and cook for 1 minute until fragrant. 
  4.  Sprinkle the flour over the vegetables and stir continuously for 1–2 minutes. 
  5.  Gradually whisk in the broth until smooth. 
  6.  Add the diced potatoes, corn, thyme, salt, and black pepper. Bring to a boil. 
  7.  Reduce the heat and simmer for 15–20 minutes, or until the potatoes are tender. 
  8.  Stir in the milk and heavy cream, heating gently without boiling. 
  9.  Blend about one-third of the soup with an immersion blender for a thicker consistency, leaving the remaining soup chunky. 
  10.  Taste and adjust the seasoning as needed. 
  11.  Garnish with fresh parsley and serve hot.
