Stuffed Pepper Soup is a hearty one-pot meal that combines all the classic flavors of stuffed bell peppers in a rich, savory tomato broth. Made with ground beef, colorful bell peppers, rice, tomatoes, and aromatic seasonings, this comforting soup is perfect for family dinners or meal prep. 

Tender ground beef is browned with onions and garlic before being simmered with sweet bell peppers, diced tomatoes, tomato sauce, and flavorful broth. Rice is added to create a satisfying texture that makes every spoonful filling and delicious. 

A blend of Italian herbs and spices enhances the savory flavors while allowing the fresh peppers and tomatoes to shine. The result is a warm, comforting soup that's both nourishing and easy to prepare.

Cooking Method


  1.  Heat the olive oil in a large soup pot over medium heat. 
  2.  Add the ground beef and cook until browned, breaking it into small pieces. Drain excess fat if needed. 
  3.  Stir in the onion and garlic, cooking until softened. 
  4.  Add the diced bell peppers and cook for 5 minutes. 
  5.  Stir in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and black pepper. 
  6.  Bring the soup to a boil, then reduce the heat and simmer for 20 minutes. 
  7.  Stir in the cooked rice and simmer for another 5 minutes until heated through. 
  8.  Taste and adjust the seasoning if needed. 
  9.  Garnish with fresh parsley before serving. 
  10.  Serve hot with crusty bread or crackers.
