Cooking Method


  1.  Preheat oven to low temperature (around 160°C / 320°F). 
  2.  Rub lamb shoulder with olive oil, garlic, herbs, paprika, salt, and pepper. 
  3.  Place lamb in a roasting tray. 
  4.  Add broth or water to the tray. 
  5.  Cover tightly with foil. 
  6.  Roast slowly for several hours until tender. 
  7.  Remove foil and roast uncovered for a golden crust. 
  8.  Rest the meat before slicing and serving.
