Cooking Method
Prepare the Mukimo
Place potatoes, peas, and corn in a large pot.
Add water and salt, then boil until tender.
Add the chopped greens during the last 5 minutes of cooking.
Drain excess water.
Mash everything together until smooth and well combined.
Keep warm until serving.
Prepare the Beef Stew
Heat oil in a large pot over medium heat.
Add onions and cook until soft.
Stir in garlic and ginger and cook for 1 minute.
Add beef cubes and brown on all sides.
