Shrimp Fried Rice
Heat oil in a large wok or skillet over medium-high heat.
Add the shrimp and cook for 2–3 minutes until pink and fully cooked, then remove and set aside.
In the same pan, sauté the garlic and onion until fragrant, then add the mixed vegetables and cook for 3–4 minutes.
Add the chilled cooked rice and stir-fry until evenly combined with the vegetables.
Return the cooked shrimp to the pan and pour in the soy sauce, mixing well.
Add the chopped spring onions and stir-fry for another 1–2 minutes until everything is heated through.
Serve hot with chili sauce, soy sauce, or your favorite Asian side dish.
