Authentic Iranian Ash Reshteh Recipe | Persian Herb, Bean & Noodle Soup
Ash Reshteh is one of Iran's most famous traditional soups, made with fresh herbs, beans, lentils, Persian noodles (reshteh), and topped with creamy kashk, fried onions, mint oil, and garlic. Rich, hearty, and packed with nutritious ingredients, this comforting soup is commonly served during Nowruz, Ramadan, and family gatherings. Its unique combination of herbs, legumes, and noodles creates a deeply satisfying meal that perfectly represents the flavors of authentic Persian cuisine.
Cooking Method
- Cook the soaked chickpeas and kidney beans in the vegetable broth for 45–60 minutes until tender.
- Add the lentils and cook for 20 minutes.
- Heat half the olive oil in a skillet and fry the sliced onions until golden. Reserve half for garnish.
- Add the garlic and turmeric to the remaining onions and cook for 1 minute.
- Stir the onion mixture into the soup.
- Add the spinach, parsley, cilantro, green onions, and dill. Simmer for 20 minutes.
- Break the reshteh noodles into smaller pieces and add them to the soup. Cook for 10–12 minutes until tender.
- Stir in half of the kashk and season with salt and black pepper.
- Heat the remaining olive oil and briefly fry the dried mint to make mint oil.
- Serve hot, garnished with fried onions, mint oil, and extra kashk.
