Authentic Japanese Tempura Recipe | Crispy Shrimp & Vegetable Tempura
Japanese Tempura is a light and crispy dish featuring shrimp, vegetables, or seafood coated in a delicate batter and deep-fried until perfectly golden. Cooking Method
- Heat the vegetable oil to 350°F (175°C).
- Pat the shrimp and vegetables dry.
- In a bowl, lightly mix the flour, cornstarch, egg, and ice-cold sparkling water. Do not overmix; a few lumps are fine.
- Dip each shrimp and vegetable piece into the batter.
- Fry in small batches for 2–4 minutes, until light golden and crispy.
- Remove and drain on a wire rack or paper towels.
- In a small saucepan, warm the dashi stock, soy sauce, and mirin to prepare the dipping sauce.
