Chorba Frik is a hearty and aromatic soup that holds a special place in Tunisia cuisine. Made with tender lamb or beef, cracked green wheat (frik), tomatoes, chickpeas, and a fragrant blend of spices, this nourishing soup is especially popular during Ramadan but is enjoyed throughout the year. Fresh herbs like parsley and celery add brightness, while harissa provides a gentle spicy kick, creating a rich and comforting bowl packed with authentic North African flavors. 

This traditional Tunisian Chorba Frik recipe is perfect for family dinners, holiday meals, or whenever you're craving a wholesome homemade soup. Rich in protein, fiber, and vegetables, it's commonly served with crusty bread, fresh lemon wedges, and dates, making it a satisfying meal that's both nutritious and deeply comforting. 

Cooking Method


  1.  Heat the olive oil in a large soup pot over medium heat. 
  2.  Add the onion and sauté for 3–4 minutes until softened. 
  3.  Stir in the garlic and cook for 1 minute until fragrant. 
  4.  Add the lamb or beef and cook until lightly browned on all sides. 
  5.  Mix in the tomato paste, grated tomatoes, harissa, cumin, coriander, paprika, turmeric, salt, and black pepper. 
  6.  Cook for 3–4 minutes, stirring frequently to develop the flavors. 
  7.  Pour in the broth and bring the soup to a gentle boil. 
  8.  Add the cracked green wheat (frik) and chickpeas. 
  9.  Reduce the heat to low, cover, and simmer for 45–50 minutes, or until the meat is tender and the frik is fully cooked. 
  10.  Stir in the chopped parsley, celery leaves, and cilantro during the last 5 minutes of cooking. 
  11.  Taste and adjust the seasoning if needed. 
  12.  Serve hot with lemon wedges and crusty bread.
