 Kuku wa Kupaka is a beloved coastal dish from Tanzania, especially popular in Zanzibar and along the Swahili Coast. This flavorful recipe features juicy grilled chicken coated in a rich coconut curry sauce made with garlic, ginger, tomatoes, lime juice, and aromatic spices. The combination of smoky grilled chicken and creamy coconut sauce creates a delicious balance of savory, mildly spicy, and tangy flavors. 

Perfect for family dinners, weekend barbecues, or festive celebrations, Kuku wa Kupaka is traditionally served with coconut rice, chapati, ugali, or fresh flatbread. Rich in protein and infused with authentic East African flavors, this comforting dish is an excellent way to experience Tanzanian cuisine at home. 

Cooking Method


  1.  Season the chicken with salt, black pepper, paprika, and half of the curry powder. 
  2.  Grill the chicken over medium heat until lightly charred and nearly cooked through. 
  3.  Heat the oil in a large pan over medium heat. 
  4.  Sauté the onion until soft, then add the garlic and ginger. 
  5.  Stir in the chopped tomatoes and cook until they break down. 
  6.  Add the remaining curry powder and cook for 1 minute. 
  7.  Pour in the coconut milk and simmer for 5–7 minutes until slightly thickened. 
  8.  Stir in the lime juice. 
  9.  Add the grilled chicken to the sauce and simmer for 10–15 minutes until fully cooked. 
  10.  Garnish with fresh cilantro and serve hot.
