 Samsa is one of the most cherished desserts in Tunisia, especially during Ramadan, Eid, and festive celebrations. Known locally as Samsa Tunisienne, this delicate pastry is made by filling thin pastry sheets with a fragrant mixture of finely ground almonds, powdered sugar, cinnamon, and orange blossom water. The pastries are folded into elegant triangles, fried or baked until golden, and generously coated in warm honey for a sweet, crisp finish. 

This authentic Tunisian dessert is prized for its crunchy exterior and rich, nutty filling infused with floral citrus notes. Whether served alongside mint tea or Arabic coffee, Samsa Tunisienne offers a delightful combination of textures and flavors that make it an unforgettable treat. Easy to prepare ahead of time, these pastries are perfect for holidays, family gatherings, or whenever you're craving a traditional North African swee 

Cooking Method


  1.  In a bowl, combine the ground almonds, powdered sugar, cinnamon, orange blossom water, vanilla extract, and egg white until a soft filling forms. 
  2.  Cut the pastry sheets into long strips if using phyllo. 
  3.  Place a spoonful of the almond filling near one end of each strip. 
  4.  Fold the pastry into neat triangles, sealing the edges with a little water if needed. 
  5.  For frying, heat vegetable oil to 350°F (175°C) and fry the pastries for 2–3 minutes per side until golden brown. 
  6.  For baking, brush each pastry lightly with melted butter and bake at 375°F (190°C) for 18–20 minutes until crisp and golden. 
  7.  Meanwhile, gently warm the honey and stir in the orange blossom water. 
  8.  Dip the hot pastries into the warm honey, ensuring they are evenly coated. 
  9.  Place on a wire rack to drain excess honey. 
  10.  Garnish with chopped pistachios, almonds, or sesame seeds before serving.
