Cooking Method


  1. Peel and cut the potatoes into French fries. Rinse and pat them dry with paper towels.
  2. Heat vegetable oil in a deep pan to 350°F (175°C) and fry the potatoes until golden and crispy. Drain on paper towels and season lightly with salt.
  3. In a large bowl, whisk together the eggs, salt, and black pepper.
  4. Add the sliced onion, diced tomato, chopped cilantro, and cooked French fries to the egg mixture. Mix gently until evenly coated.
  5. Heat 1 tablespoon of oil in a large non-stick skillet over medium heat.
  6. Pour the egg and potato mixture into the skillet, spreading it evenly.
  7. Cook for 5–6 minutes until the bottom is golden brown and set.
  8. Carefully flip the omelette using a large plate or lid, then cook the other side for another 4–5 minutes until fully cooked.
  9. Transfer to a serving plate and cut into wedges.
  10. Serve immediately with Kachumbari, chili sauce, or tomato ketchup.
