Marinate the chicken or mutton with yogurt, biryani masala, and salt for at least 1 hour.
Wash and soak the basmati rice for 30 minutes, then cook it until 70% done and drain.
Heat ghee in a heavy-bottomed pot and sauté the whole spices until fragrant.
Add the marinated meat and cook until partially done.
Layer the partially cooked rice over the meat and drizzle with a little ghee.
Cover the pot tightly and cook on low heat (dum) for 25–30 minutes until the meat is tender and the rice is fully cooked.
Gently fluff the biryani and serve hot with raita, salad, or boiled eggs.
