 Kimchi jjigae is one of South Korea's most beloved comfort foods, renowned for its bold, spicy, tangy, and deeply savory flavors. This iconic Korean stew is made by simmering well-fermented kimchi with pork belly or tofu, onions, garlic, Korean chili flakes (gochugaru), and a rich broth until all the ingredients meld together into a warming, flavorful dish. The longer the kimchi has fermented, the richer and more complex the stew becomes, making aged kimchi the preferred choice for authentic Kimchi Jjigae. 

A staple in Korean households, Kimchi Jjigae is enjoyed year-round but is especially comforting during cold weather. It's commonly served bubbling hot in a stone pot alongside steamed rice and a variety of Korean side dishes (banchan). The combination of tender pork, silky tofu, spicy kimchi, and aromatic broth creates a satisfying meal that's both hearty and nourishing. 

This versatile recipe can easily be customized with seafood, mushrooms, canned tuna, or extra vegetables to suit different tastes. Whether you're new to Korean cuisine or a longtime fan, Kimchi Jjigae is an easy yet incredibly flavorful dish that brings authentic Korean home cooking to your table. 

Cooking Method


  1.  Heat the sesame oil in a pot over medium heat. 
  2.  Add the pork and cook until lightly browned, about 4–5 minutes
  3.  Stir in the garlic, onion, and chopped kimchi, cooking for another 5 minutes until fragrant. 
  4.  Add the gochugaru, gochujang (if using), soy sauce, and sugar, mixing well. 
  5.  Pour in the broth and bring the stew to a boil. 
  6.  Reduce the heat and simmer for 20–25 minutes to allow the flavors to develop. 
  7.  Gently add the tofu slices and cook for another 5–7 minutes
  8.  Stir in the green onions just before serving. 
  9.  Garnish with sesame seeds and extra green onions if desired. 
  10.  Serve piping hot with steamed rice and your favorite Korean side dishes.
