In a bowl, combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
Add flour, salt, and melted butter. Mix until a soft dough forms.
Knead the dough for 8–10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise for 1–2 hours until doubled in size.
Divide the dough into small portions and roll each portion into a long rope.
Cut the ropes into small bite-sized pieces.
Bring a large pot of water to a boil and add baking soda.
Boil the pretzel bites in batches for 30–40 seconds. Remove and place them on a baking tray.
Sprinkle with coarse salt and bake at 220°C (425°F) for 10–12 minutes until golden brown.
Brush with melted butter and serve warm with your favorite dipping sauce.
