In a bowl, mix warm water, sugar, and yeast. Let it rest for 5–10 minutes until foamy.
Add flour, salt, and olive oil. Mix until a firm dough forms.
Knead the dough for 8–10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise for 1–2 hours until doubled in size.
Divide the dough into equal portions and shape each portion into a ball.
Make a hole in the center of each ball and gently stretch it to form a bagel shape.
Bring a large pot of water to a boil and add honey or sugar.
Boil the bagels for 30–60 seconds on each side. Remove and drain.
Place the bagels on a baking tray and add sesame seeds, poppy seeds, or your favorite toppings.
Bake at 220°C (425°F) for 20–25 minutes until golden brown.
Let the bagels cool slightly before serving.
