 Mechouia is a vibrant and smoky salad that is a staple of Tunisia cuisine. Made with fire-roasted tomatoes, green peppers, onions, and garlic, this authentic salad is finely chopped and tossed with extra virgin olive oil, fresh lemon juice, and aromatic spices. Cooking Method


  1.  Preheat the oven to 425°F (220°C) or prepare a charcoal grill. 
  2.  Place the tomatoes, peppers, onion, and unpeeled garlic on a baking tray or grill. 
  3.  Roast for 25–30 minutes, turning occasionally, until the vegetables are charred and tender. 
  4.  Transfer the vegetables to a bowl and cover for 10 minutes to loosen the skins. 
  5.  Peel the tomatoes, peppers, onion, and garlic. 
  6.  Finely chop all the roasted vegetables or pulse them a few times in a food processor for a chunky texture. 
  7.  Transfer the mixture to a serving bowl. 
  8.  Stir in the olive oil, lemon juice, cumin, paprika, salt, and black pepper. 
  9.  Mix well and adjust the seasoning to taste. 
  10.  Top with tuna, hard-boiled eggs, olives, capers, and parsley if desired. 
  11.  Chill for 15–20 minutes before serving for the best flavor. 
  12.  Serve with crusty bread, grilled meats, fish, or couscous.
