Indian Dhokla is a soft, fluffy, and steamed savory cake from Gujarat made with gram flour (besan) or fermented rice and chickpea batter. Light, nutritious, and mildly tangy, Dhokla is a popular breakfast and snack served with green chutney and fried green chilies.
In a bowl, mix gram flour, yogurt, water, turmeric, and salt to make a smooth batter.
Add fruit salt (Eno) or baking soda just before steaming and mix gently.
Pour the batter into a greased steaming tray.
Steam for 15–20 minutes until a toothpick comes out clean.
Heat oil and add mustard seeds, sesame seeds, curry leaves, and green chilies.
Pour the tempering evenly over the steamed dhokla.
Garnish with fresh coriander and grated coconut before serving.
